My general weekly sharpening upkeep consists of using a 1000 grit, a 6000 grit, and sometimes this 8000 grit. It will put a mirror-finish on your edge better than factory that you could shave your arm with. I cook professionally and while I consistently use this on my paring knife, I am a bit hesitant when it comes to my chef knives due to the fact that it makes the edge so fine I worry about chipping while on the line. I use a Wusthof or Takamura for my chef knives and generally I will keep one sharpened on this stone for prep(and fun) and I won't go higher than 6000 on the one I'm using on the line(normally the Wusthof). I actually have used knives finished with this on the line and haven't had any issues but it makes me a bit hesitant during the rush only because I dread a microchip and having to buff it out on a low grit after work. All in all though, I've never used anything that puts an edge on a knife even remotely as sharp and beautifully as this whetstone. 5Great polishing stone This is an amazing polishing stone.They say it's a soaking stone, but experts assure me that you do not want to soak any stone 3000 grit and over, just do splash 'n go, for they could crack.It come with its own cleaning stone, which is a nice touch. 5Stone is not flat out of the box. Be sure to have a flattening stone to correct if you are honing straight razors. 3Truly Great Whetstone for the Price I just got my Kitayama #8000 Whetstone Friday and I couldn't be more pleased. This is a great stone especially for this price compared to other stones that are in the plus $150 range. I attached a picture to show after going through a few different stones and then finishing on a strop loaded with chromium. The shine really didn't change much after stroping. Make sure you check for flatness when you get it, it's best to run it off of some 220 wet dry sandpaper on top of float glass just to be safe before you start using it. I am truly pleased at this purchase I cannot recommend it more. 5Does the job! Does what I need it to. I ve been using it every week-2 weeks on a Wusthof Ikon Chef s knife and nothing else. Keeps it nice and sharp when used with proper technique. 5Wonderful stone. Came with a nagura stone Wonderful stone. Came with a nagura stone, which is almost necessary for this stone because it loads very quickly. I think it's just the nature of this very hard stone that doesn't develop its own slurry. It is great for finishing knives before going to the strop. You will not be disappointed with this stone, produces a very fine mirror finish. My only complaint is that it was not completely flat upon arrival, but most stones aren't. Invest in a diamond plate if you're serious about sharpening, you will need one anyway. Happy sharpening!PS. This stone does not require a long soak. About 5-10 minutes is all you need. Soak it longer than that and you risk it cracking. 5Wonderful polishing stone For the money you cannot beat the quality here. Highly recommended.No clue why some other reviewer gave this 1 star. It's not a metal remover unless you want to sit there and scrape a blade for 14 gazillion hours in a row, it's a finishing stone. I've also read elsewhere that this might be a 12000 grit stone, but this is not claimed by the manufacturer. I've never used a 12000 grit stone, seriously, I do not care. I only use this for plane blades and chisels, so for that stuff anything over 8000 grit is a waste of money and time. In fact, all I typically use is a Shapton Pro 1000 and then the Kitayama. That's it. Razor blades on everything. No need for any in-between grits.Comes attached to a wood base, but I place it on a square of rubbery shelf/drawer liner and it stays put on the counter. 5Sooo nicee Incredible stone. True 8k+. Has amazing feedback and a very soft and creamy feeling when sharpening. Puts a amazing mirrored polish on your edge as long as you had a good grit progression up to it. Its very thick too and will last for years. I like the base too, its convenient and gets the stone plenty high off the table to clear your knuckles for any shape knife. I also have the Arashiyama 6k to precede this which is made by the same people in Kyoto, Japan and I highly recommend both. Great price for the quality, but seems to be going up so get it while you can. I would most Definetly be buying another if I ever need to. 5Love this stone Love this stone! after the regular sharpening session, this stone takes the edge of my knife to another level !! 5Instant sharpening improvement and a beautiful stone as well I could not be more pleased with this stone, or the seller Korin. My previous finest stone was a #4000 but I wasn't getting the polish I wanted with it. While I was waiting for the Kitayama #8000 to arrive I found Korin's YouTube channel and watched every sharpening video they had. From their videos I understood some of my sharpening mistakes and when the stone arrived I went right to work, noticing a huge improvement in my work right away. The stone itself works as well as I had hoped it would. It was also perfectly and beautifully boxed, including a wooden base and the stone for working up a slurry. They included an elegant and expensively produced catalogue of their knives and sharpening items that rather than being full of hyperbole and self-reference is a respectful tribute to Japanese knife making and it's craftsmen. It is full of interesting and useful information and is well-written. I read the whole catalogue. In the future I will think of the seller as a resource for kitchen knives, sharpening stones, and knowledge, not simply the provider of this one stone. 5
